Start the New Year Off with a Spicy Bang

From fiery seafood ceviche to fresh lettuce cups, kickstart your new year with these three kicking recipes featuring Texas Pete. 

Texas Pete Fiery Ceviche

Warm up those cold winter days with this spicy yet refreshing seafood salad. It’s easy to throw together with Texas Pete Fiery Sweet Sauce, shrimp, crab, and a few other ingredients.

Ingredients

  • 2 Tbsp. Texas Pete Fiery Sweet Sauce
  • 3/4 C cocktail sauce
  • 1/2 lb. cooked shrimp
  • 1/2 lb. crab meat
  • 1/4 C purple onion, diced
  • 1 small jalapeño, seeded, deveined and minced
  • 2 Tbsp. cilantro, chopped
  • Zest and juice of 1/2 a lime
  • French bread
  • Baby salad greens mixture

Directions

1. Mix all the ingredients together and let sit covered in the refrigerator for one hour.

2. Serve over baby salad green mix with a side of French bread.

Honey Mustard Balsamic Garlic Glaze

Make a glaze to amaze. This delicious recipe featuring Texas Pete® Honey Mustard is the perfect complement to fish, chicken and more. 

Ingredients

Directions

1. Preheat oven to 425°F.

2. On a small sheet tray, combine garlic and olive oil and roast until golden brown, approximately 15 to 20 minutes.

3. Combine all ingredients in a blender and blend until smooth. Use as a glaze on your protein of choice or on vegetables.

Pairing with Salmon:

1. Preheat oven to 400°F.

2. Brush salmon filets with olive oil and season with salt and pepper.

3. Place salmon flesh side down in a hot skillet and sear on medium high until the flesh is brown and a crust is beginning to form, about 4-6 minutes.

4. Flip salmon to skin side down and brush top with the Honey Mustard Balsamic Garlic Glaze and place in oven for an additional 4-6 minutes. This will allow glaze to caramelize and coat the salmon.

5. Remove salmon from oven and brush with another coat of glaze.

6. Serve over a bed of basmati rice, with an extra side of Honey Mustard Balsamic Garlic Glaze, garnish with sesame seeds and scallions and enjoy!

Lettuce Cups with a Little Kick

These healthy little lettuce cups are filled with a tasty combination of vibrant sauce, tender meat, and crispy-crunchy vegetables. 

Ingredients

  • 4 Boneless Skinless Chicken Breast (8 oz.), cooked, shredded
  • 3 tbsp. Texas Pete® Original Hot Sauce
  • 1/2 cup Carrots, shredded
  • 3 oz. Ranch Dressing
  • 2 oz. Blue Cheese, crumbled, divided
  • 2 heads Bibb Lettuce, cleaned, separated into cups
  • 1 oz. package Crispy Fried Onions

Directions

1. In a medium bowl, place chicken and coat with Texas Pete® Original Hot Sauce.

2. In a small bowl combine carrots, dressing and half of the blue cheese.  Combine thoroughly.

3. When ready to serve, fill each lettuce cup with chicken and top with carrot mixture. 

4. Garnish with crispy onions and remaining blue cheese. Serve and enjoy!
