Tex-Mex Street Corn Salad

Ingredients
- 2 tbsp Unsalted Butter
- 2 (14 oz.) cans Corn, drained
- 1 tbsp Texas Pete® Dust Dry Seasoning
- 2 tbsp Texas Pete® Original Hot Sauce
- ¼ cup Lime Juice
- ½ cup Sour Cream
- ½ cup Red Onion, diced
- ½ cup Red Bell Pepper, diced
- ½ cup Avocado, diced
- ½ cup Cotija Cheese, crumbled
- ¼ cup Fresh Cilantro, minced
Directions
- In a large frying pan over high heat, melt the butter until bubbly. Add the corn and Texas Pete® Dust Dry Seasoning. Once corn begins to char, remove from heat and set aside to cool.
- Combine sour cream, lime juice, salt, and Texas Pete® Original Hot Sauce in a small bowl. Set aside.
- In a large bowl, toss the charred corn, red onion, red pepper, avocado, cotija cheese, spicy sour cream mixture, and half of the cilantro.
- Garnish with remaining cilantro. Serve and enjoy!
